Chanterelle Cheese Pizza

A quick and wonderful weeknight crowd pleaser.  We skip the pizza prep and bring home our favorite cheese pie then add farm fresh shrooms, herbs, and parmesan cheese.  

Ingredients

  • 1 Large or XL Cheese Pizza

  • 1 Lb Chanterelle, Shiitake, or Oyster Mushrooms

  • 1 T Bacon Fat

  • 3 Cloves Garlic, minced

  • 1 large bunch of Fresh Basil (or small bunch of oregano, thyme, or chives)

  • Salt & Pepper

  • Parmesan Cheese

Steps

  1. Roughly chop your Mount Joy Mushrooms and herbs.

  2. Heat a medium cast iron pan to medium high. Once hot, coat bottom of your pan with bacon fat or olive oil. Sauté shrooms for 3-5 minutes with garlic S&P.  Chef's Tip - this is a versatile recipe Oyster Mushrooms will cook in 3 - 5 minutes, chanterelles and shiitakes will take 5 - 7 minutes.

  3. Add herbs of your choosing, stir, and immediately remove from heat.

  4. Finish with salt and pepper.

  5. Place generously atop your cheese pizza and finish with fresh parmesan cheese.
