Oyster Mushroom Breakfast Scramble
Mushrooms aren’t just for dinner. Our mild, creamy oyster mushroom varieties pair so well with farm fresh eggs. This quick recipe is a single sauté pan favorite at the farm.

Steps

Roughly chop your Mount Joy Mushrooms.

Scramble 4 eggs with 2 T water. Chef’s tip - I love to use my immersion blender for light, fluffy scrambles.

Heat a medium sauté pan to medium low. Once hot, coat bottom of your pan with olive oil. Sauté shrooms for 2-3 min with garlic S&P.

Add veggies and herbs of your choosing and immediately pour in your egg mixture.

Continue cooking for 3-5 minutes. Finish with salt, pepper, and fresh parmesan cheese.
