Oyster Mushroom Breakfast Scramble

Mushrooms aren’t just for dinner. Our mild, creamy oyster mushroom varieties pair so well with farm fresh eggs.  This quick recipe is a single sauté pan favorite at the farm.

Ingredients

  • 4 farm fresh chicken eggs

  • 2T Water

  • 1T Olive Oil or Salted Butter

  • 1/2 Lb MJM Oyster Mushrooms

  • 1/4 Cup Seasonal Greens (Optional)

  • 2T Parmesan Cheese

  • Salt & Pepper to Taste

Steps

  1. Roughly chop your Mount Joy Mushrooms.

  2. Scramble 4 eggs with 2 T water. Chef’s tip - I love to use my immersion blender for light, fluffy scrambles.

  3. Heat a medium sauté pan to medium low. Once hot, coat bottom of your pan with olive oil. Sauté shrooms for 2-3 min with garlic S&P.

  4. Add veggies and herbs of your choosing and immediately pour in your egg mixture.

  5. Continue cooking for 3-5 minutes. Finish with salt, pepper, and fresh parmesan cheese.
